There were many different green leafy vegetables that were added either to the soup pot or salad bowl back in Bible times.

These included turnip and beet greens (yum!!), lettuces, endive, parsley, watercress, chicory, sorrel and dandelion.

The greens would be dressed with a little olive oil and garlic.

What an appreciated change over the dried fruits that would carry the people over the winter!

Many of these greens were combined with horseradish (yum again!) to make the bitter herb dish required at the Passover meal- Ex.12:8

Gail's note- I used to grow sorrel. It is high in oxalic acid so you might want to mix it with a whole grain, but with it's lemony flavour it would have brightened up any soup OR salad!

For anybody with recurrent calcium oxalate kidney stones, leafy green vegetables, especially beet greens, INCREASE your chance of having another stone. Sorry to say, leafy greens are not for everyone.
