I recall that some fine ladies of this forum were asking about recipes to replace the discontinued Nuteena from Loma Linda Foods. A friend passed this on thinking it may prove helpful... (someone might want to pass this along to Clio)

“Adventures in Vegetarian Cooking” –published by Southern Publishing Association; Nashville, Tennessee

NUT CHEESE NO. 1 (Nuteena/Proteena?)

1 cup peanuts, skinned
½ cup cold water
1 tsp. salt
½ cup gluten flour

Put the peanuts to cook in 1 quart of cold water; bring to a boil, and boil slowly for 1 hour; then drain. Save water soup stock. Grind peanuts through a food chopper, using nut butter disk. Add to ground nuts 1/2 cup cold water, salt, and gluten flour. Mix thoroughly, put into a small tin can, and steam or boil, setting in a kettle of water that does not come to top of can, for 3 hours or longer. When cold, remove from can. It may be sliced and served cold with jelly, broiled and served with gravy or jelly, baked in gravy or tomato sauce.

NUT CHEESE NO.2 (Nuteena/Proteena?)

1 cup peanut butter
2 cups cold water
½ cup gluten flour
1½ tsp. salt

Stir peanut butter smooth with water, adding water a little at a time. Stir in flour and salt, put into tin can that has a tight-fitting cover, and steam or boil from 3 to 54 hours. White flour may be used instead of gluten flour, but gluten flour gives better results.

Following the above recipes are others in the book for HOMEMADE NUTTOSE, HOMEMADE PROTOSE and HOMEMADE NUTMEAT, etc. The SDA vegie friend told me these are the original recipes for vegemeats - that were later commercialized by such as Loma Linda and others...

Personally, I don’t know from nuthin’ ifn it didn’t originally eat grass.

I wonder if there are options for those who do not tolerate
too much gluten.

I thought I just read somewhere, that some company was putting that back on the market! Maybe I missread but I thought that's what it said.
