joeb Posted October 1, 2013 Share Posted October 1, 2013 I couldn't find anywhere else to post this, so I'm posting it here. It's an original recipe of mine. I really like it, but then I'm biased. I call this goulash, but it's not really. I just don't know what else to call it. 2 medium onions halved and then sliced 6 cloves of garlic very coarse dice 2 12" zuchinni 3 8" yellow squash 2 heaping tablespoons hungarian paprika 1 heaping tablespoon dried thyme 1 heaping tablespoon dried rosemary 2 tablespoons McCay's Chicken seasoning Chicken flavored tvp Beef flavored tvp 1 or 2 jalapeno peppers (optional) 1 red bell pepper sliced into 1/4" slices kosher salt to taste Water as needed I cut the squash into 1/2" slices. The TVP is optional as to how much you want to use, but use it at a 2 to 1 ratio with the chicken flavored tvp being the greater amount. I posted this the last time I was in town, and the library was closing just as I posted it so I was in such a hurry I didn't re-read the post before I posted it. Better late than never, I guess.... The other optional ingredient is a diced jalapeno or two. I add it seeds and all, and the heat is a nice addition, if you like heat.
