I think I figured out the "trick" to this omelet--it's the size of the pan! When I cook at home, I'm cooking for at least 2 of us (usually 4) and my pots and pans are bigger. Members rudywoofs (Pam) Posted May 24, 2016 Members Posted May 24, 2016 I used to think I had to cook the egg on both sides before adding the filling to make the omelet.. That's what always made mine break apart. Now I just cook over low heat, *cover the skillet* with a lid until the egg is just done, add the filling on half, and fold the other half over on top, and keep it on the heat until the filling is done, flipping it a couple times during the process.
