Well as it is now Christmas Day in this part of the world - even if the light is still in the process of dawning - let me be the first to wish those who come to this board a happy and safe Christmas, and may it be a time of refreshing and increased joy in the wonderful Gift.

Thank you. I got the Mexican pastor at the church we work with in Mexico to call everyone together for a Christmas party. We had it yesterday afternoon (Sunday December 23). It was a great time. We brought gifts for all the Mexican children and an Adventist chaplain that also lives along the border, not far from us, also brought gifts for all the children. We broke open two piñatas and sang Christmas hymns with guitar. I baked five sugar-free pies (2 pumpkin, 2 berry, 1 mango) and made four dishes of enchiladas. The ladies at the church made a bunch of tamales. We had a great turn-out and it was a lot of fun.

This morning (Monday December 24) we had a party in our office building for all the tenants. My wife made vegetarian, Central American tamales and I bought four dozen Mexican vegetarian tamales. Everyone loved them and it gave me an opportunity to share our health message with a lot of people. Everything went quite well. I took my wife and kids into the office for everyone to meet.

We are going to open the gifts under the tree tonight and open those in the stocking tomorrow morning. I will be baking more healthy pies and healthy cookies to share with the neighbors. My little boy has been asking to go see the movie sea horse and it opens tomorrow. I hope it isn't too bad. I bought tickets today because it is likely to be sold out tomorrow.

Sounds like great fun!! Our son's Sabbath School class adopted a classroom full of 2nd graders at a local public school. Most are immigrant kids whose parents are blue collar workers (Fact is I think that would describe all of them.). From the kindness of the people from that SS class, some doctors and teachers in the area we were able to take the children some toys and much needed items like jackets, shoes, mittens etc. The little kids were so cute and so grateful! It was so much fun to give to them! They were so appreciative! For some, it was the first time they had a warm coat that fit. (There were 27 kids in that classroom.)

If, when you are looking for mangoes you cannot go wrong with either the Keitt or Kent varieties. They are large, have very little fiber, flat seed and are sweet as honey. The Keitts and Kents that come in from various countries of South America are not as large as the ones that grow here in Florida but they are just as tasty. I purchase mine in COSTCO....only those two varieties. I will set out a Vietnamese mango tree when there is no more danger of frost. It is different than the other two. It will supplement my two Keitt trees which produced a magnificent six fruits this year. We are hoping for a bumper crop in 2008. Now if the avocado will only do the same!
