GreatLakesGramma Posted April 4, 2010 Posted April 4, 2010 In that case, find somebody who actually does like them, and give them away. After 2 or 3 years, you're not going to miss the money they cost you. Quote Catherine God is the strength of my heart and my portion forever. Psalm 73:26. I soaked two of them in chai seeds this am, but them in a toaster over for 12 minutes, added ketchup to one tartar sauce to the other. They were GREAT!!! Never give up. Liz Posted April 4, 2010 Posted April 4, 2010 You gotta be kidding. A can a year? You might as well throw them out. Or better yet, give them to the homeless. That's just downright mean. Members phkrause Posted April 5, 2010 Members Posted April 5, 2010 Not sure Stan if you eggs at all, but if you do, deep them in a bowl of eggs, I usually use egg beaters, and than deep them into a bowl of breadcrumbs. Than in a fry pan fry them in oil, Olive, Canola or Smart Balance Omega (which is a combination of both) put on to a bun with pickles, tomatoes, onions with ketchup etc. I think I've had them before! Who makes them? Anyway if they are anything like Choplets, they should be OK. pk Quote phkrause When the righteous are in authority, the people rejoice; But when a wicked man rules, the people groan. Suzanne Sutton Posted April 14, 2010 Posted April 14, 2010 Eggplant Cutlets Here is something to try that may not sound good but it is. Take 2 eggplants, cut them on the round side, about an inch or so thick. Dip the cutlets in egg batter then in seasoned bread crumbs. Line them up on a lightly oiled cookie sheet and bake in a 350 degree oven, turning after 10 or 15 minutes so they brown on both sides. These are really good. Husband loves them. Season with a little lite salt if you must. Suzanne Quote
zeta1 Posted April 14, 2010 Posted April 14, 2010 Suzanne..you are right they are good prepared that way, if you like fresh tomatoes, slice and bake on top. However, i just use egg whites. Trying to eat healthy these day, do you have any other recipes to recommend? Quote
Dottie Posted April 15, 2010 Posted April 15, 2010 Suzanne - - Do you think that doing the eggplant with millet bread crumbs and egg replacer wold work? Hubby is gluten intolerant. He eats eggplant parmesan only once in a great while, but has repercussions when he does. Quote
Amelia Posted April 15, 2010 Posted April 15, 2010 On another website I read that gluten free tempura batter, then bread crumbs worked well. I found this website for home made glutem free breadcrumbs. http://glutenfreegoddess.blogspot.com/2005/11/best-gluten-free-bread-crumbs.html Quote <p><span style="color:#0000FF;"><span style="font-weight:bold;"><span style="font-style:italic;">"Do not use harmful words, but only helpful words, the kind that build up and provide what is needed, so that what you say will do good to those who hear you."</span></span> Eph 4:29</span><br><br><img src="http://banners.wunderground.com/weathersticker/gizmotimetemp_both/US/OR/Fairview.gif" alt="Fairview.gif"> Fairview Or</p>

Suzanne Sutton Posted April 15, 2010 Posted April 15, 2010 Dottie, be creative and try whatever you feel will work for you. Another thing about eggplants...I have read several recipes that say to peel them. No way,...use the peel and all in any recipe calling for these veggies. That dark skin must be loaded with antioxidants and other good stuff. Zeta1, eggplants can also be used in place of macaroni in "mac and cheese." It's good, even though we are trying to get away from using so much cheese. Will have to try it with non-dairy cheese. Suzanne Quote
Amelia Posted April 15, 2010 Posted April 15, 2010 OOooo How do you use the eggplant as macaroni? Administrators Gail Posted April 15, 2010 Administrators Posted April 15, 2010 Aubergines!!! YUM!!! I'd take those over the Multigrain cutlets, thank-you-very-much! But that doesn't help Stan's problem... I wonder if skewering them with pineapple and mushrooms and covering them with bar-be-cue sauce would help. Quote Isaiah 32:17 And the work of righteousness shall be peace; and the effect of righteousness quietness and assurance for ever.
Ellen Posted April 15, 2010 Posted April 15, 2010 Another way to use canned cutlets is to make a pot of gravy (not a lot) and when it is tasty cut the "steaks" in bite-sized peices and head in the gravy (or tomato sauce). To make it easy just open a can of tomato soup and don't thin it. Maybe put in chopped onions and some italian seasoning or basil. I don't like to fry too many things these days, although I like stir fry. I recently found a vegetarian "oyster" sauce - it's made from mushrooms - yum. Cut the choplets into the vegetables with the stir fry. Quote
Suzanne Sutton Posted April 20, 2010 Posted April 20, 2010 Amelia, use the eggplant instead of macaroni, works great....Try this too. Eggplant Steak Cut eggplant lengthwise into four one-half inch slices to resemble steaks. Dip in egg batter and bread crumbs...Follow same directions as eggplant cutlets. Suzanne Quote
