I know quite a few on here are great "chefs" - maybe they would share some hints too? OzarkWoman Posted December 10, 2012 Posted December 10, 2012 Vegetarian Baked Beans Recipe by: Elaine Poncelet (me) Ingredients: 2-3 Tbs Canola Oil 1 Lg Onion, coarsely chopped 2-3 Cloves Garlic, chopped 1 Lg Green Bell Pepper, coarsely chopped 1 Lg Red Bell Pepper, coarsely chopped 1 Lg Orange or Yellow Bell Pepper, coarsely chopped 12 Med Green Chilis, roasted & peeled & coarsely chopped (I used Hatch, NM Fresh med hot Green Chilis) 1 lb Pinto Beans, cooked until almost tender & drained 1 14 1/2 oz Red Kidney Beans, drained 1 14 1/2 oz Butter Beans, drained 1 19 3/4 oz Black Beans, drained 1 Pkg Morningstar Crumbles 1/3 Cup Brown Sugar 1/3 Cup Granulated Sugar 1/3 Cup Catsup 1/3 Cup Barbecue Sauce, plain 1 1/2 Tbs Chili Powder (I used ground up red chilis from NM) 2 Tbs Prepared Mustard 2 Tbs Molasses Salt & Pepper to taste Instructions: Preheat oven to 350 degrees. Heat the oil and cook the onion, garlic, and all peppers together until softened. Drain off any excess oil. Add all of the beans, crumbles, brown and granulated sugar, catsup, barbecue sauce, chili powder, prepared mustard, molasses and salt and pepper. Mix everything until well incorparated. Put everything into baking pot or dish, uncovered. (I use a Dutch Oven without the lid.) Bake in the preheated 350 degree oven for 1 hour, uncovered. Serve warm. Quote
Liz Posted December 10, 2012 Posted December 10, 2012 Mine isn't very healthy, but it sure is good and it satisfies that salty/sweet craving I sometimes get. I also only make this at Christmastime. 1 package saltine crackers 1/2 pound butter 3/4 cup white sugar 2 cups semisweet chocolate chips 1. Preheat oven to 425 degrees F (220 degrees C). 2. Melt butter in a saucepan over medium heat. Stir in sugar, and bring to a low boil. Continue boiling, stirring constantly to prevent burning, approximately 3 minutes. 3. Arrange crackers on a cookie sheet in a single layer, and drizzle with sugar mixture. Bake at 425 degrees F (220 degrees C) for 5 minutes, or until edges begin to brown. 4. Remove from oven and spread chocolate chips evenly over the top as they melt. Cool until chocolate has hardened, and break into pieces. Store in refrigerator until ready to serve.
