The word  "parish" is used by clergy of many Christian denominations to indicate that they pastored a congregation.  It is  used in SDA circles.  As to you never hearing is so used, I can not speak to that.

In SDA circles the term "Adventist Pastor" is used very broadly in a manner that includes chaplains, administrators  retired clergy and probably more.  IOW to use the term Adventist Pastor communicates a little but not very much.

The historical use of the word "parish" is clearly associated with Catholic and Episcopal churches.  So, in that respect your confusions is understandable.  But, at least in the US there is  secondary use of the word that has come into use.  That secondary use applies the word to other Christian denominations and also in a bit more limited manner than as it is used in Catholic circles.

And don't forget about the parishes in Louisiana! While other states are divided into counties, Louisiana is divided into parishes. While the basis for calling them parishes is because they were primarily Catholic regions, the label "stuck" and is part of what makes Louisiana unique from the rest of the 49 states.
